Tools

Uses an open flameA step here involves a lit match or a torch near citrus oil or alcohol, both of which catch. Work away from anything that can burn, keep the bottle well back from the flame, never flame anything over a glass you are holding, and never add alcohol to something already alight. Expect a brief flare — that is the point of the technique — and give it room.

Preparations

Chocolate Stout SyrupUntil syrupysee method

Open a chocolate stout and pour it into a saucepan. Cook it on low until light steam comes off it, which brings out its caramel flavor, and keep it on low until it has reduced to a syrup. Let it cool before using.

Method

  1. Add everything to a shaker with ice and shake.
  2. Strain into a chilled coupe.
  3. Lay a cinnamon stick across the top.
  4. Optional, for show: hold the end of the cinnamon stick in a lighter flame until it catches, blow it out so it smokes, and lay it back on the glass. Keep hair, sleeves and paper well clear.
