Improved Polynesian Pearl
The same tropical build with white rum added and a quarter ounce of citric-malic solution standing in for the acidity POG juice does not have. That works out near two and a half millilitres per ounce of juice.

Preparations
Bring a cup of water to the boil with two cinnamon sticks in it. Stir in two cups of sugar until it has dissolved, take the pan off the heat, cover it, and leave it at room temperature overnight. Strain it through cheesecloth before you bottle it.
Put 24 g citric acid and 11 g malic acid in a measuring glass marked in millilitres. Add water until the total volume reaches 100 ml — not 100 ml of water, which would come out weaker. Stir until completely dissolved, bottle, and keep it in the fridge.
Method
- Add everything to a shaker and fill it two-thirds with ice.
- Shake until cold.
- Strain over fresh ice.
