Flaming Dr Pepper
Amaretto with overproof rum floated on it, lit, and dropped into a pint of beer. There is no Dr Pepper in it and it tastes like Dr Pepper.

Tools
Uses an open flameA step here involves a lit match or a torch near citrus oil or alcohol, both of which catch. Work away from anything that can burn, keep the bottle well back from the flame, never flame anything over a glass you are holding, and never add alcohol to something already alight. Expect a brief flare — that is the point of the technique — and give it room.

Method
- Pour the beer into a pint glass, filling it no more than half way.
- Pour the amaretto into a shot glass and float the overproof rum on it over the back of a bar spoon.
- Clear the bar around you, light the rum, and let it burn for a couple of seconds.
- Drop the shot into the beer. The beer puts it out on the way in. Check that it is out before you pick the glass up.
- Skip the flame entirely and it still works — the rum is what makes the flavour, not the fire.
