Preparations
You want to do this in a well ventilated kitchen, as the fumes from cooking the reduction will make the air noxious. Place 4 ½ quarts water, 10 dried chile de arbol peppers, 10 ancho chile peppers, and 6 jalapeno chile peppers (sliced lengthwise, 4 with seeds, 2 without) in a large saucepan, bring to a boil, and cook for 20 minutes. Strain into a large container.
Method
- Fill the pilsner glass with crushed ice and add the ingredients, except the bitters, in the order they are listed.
- Use the swizzle method to combine: put a swizzle stick between your hands, lower the swizzle stick into the drink, and quickly rub your palms together to rotate the stick as you move it up and down in the drink. When frost begins to form on the outside of the glass, the drink is mixed.
- Top with the bitters and more crushed ice. Garnish with the watermelon slice and fresh cilantro.
