Preparations

Spiced Rum1 weekproject

Toast six cloves, a cinnamon stick, six allspice berries and ten peppercorns until fragrant. Off the heat add a quarter cup of demerara syrup and a splash of overproof rum, scrape in a split vanilla bean and drop the pod in too. Top up with the rest of the bottle, jar it, and leave it somewhere dark until it tastes right, shaking occasionally.

Method

  1. Add the bitters, rums, and a large block of ice to the rocks glass.
  2. Add the syrup and stir until the cocktail is chilled.
  3. Pour a bit of pear calvados into a spray bottle and mist the cocktail with it.
  4. Garnish with dehydrated banana chip.
