Preparations
Place 10 ½ oz Ocho Blanco tequila and ⅛ oz loose-leaf silver needle tea in a mason jar and steep for 24 hours. Strain before using or storing.
Pit 4 ½ lbs of peaches and puree the peaches. Stir 2 teaspoons of Pectinex Ultra SP-L into the puree and then spin the mixture in a centrifuge at 4200 rpm for 20 minutes. Strain the resulting juice through a coffee filter. Add 53 oz caster (superfine) sugar and 1 oz citric acid to the juice and stir until the sugar has dissolved. Stir in 10 drops of galbanum tincture and use immediately or store in the refrigerator.
Put a good handful of clary sage into a jar with enough high-proof neutral spirit to cover it. Leave it somewhere dark for three days, shaking it when you remember. Strain it into a dasher bottle. A few drops is plenty in a drink.
Method
- Add everything except the club soda to a highball glass, add ice, and stir until cold.
- Top with club soda. Garnish with the lemon wedge.
