Preparations

Spiced Pineapple Syrup5 minutessee method

Place 1 part pineapple juice and 1 part Spiced Pineapple water in a mason jar and stir to combine.

Pineapple Juice20 minutessee method

Remove the skin and core from a fresh pineapple, reserving both for the Spiced Pineapple Water. Chop the pineapple flesh, place it in a blender, and puree until smooth. Strain through a chinois.

Spiced Pineapple Water45 minutessee method

Place the reserved pineapple skin and core, cinnamon sticks, a chipotle chile pepper, allspice berries, whole cloves, cacao nibs, and 6 quarts water in a saucepan and warm over low heat. Cook until the water is very fragrant. Strain before using or storing in the refrigerator.

Simple Syrup20 minutessee method

Place 1 cup sugar and 1 cup water in a saucepan and bring it to boil, stirring to dissolve the sugar. Remove the pan from heat and let the syrup cool completely before using or storing.

Method

  1. Add everything except the milk to a bowl and stir until well combined.
  2. Add about 1 oz. milk and allow it to curdle. To turn this into a punch, maintain the ratios, adding about 20 percent milk to the amount of the liquids (mezcal, rum, lemon juice, and syrups), as well as water for desired dilution.
  3. Store the mixture in the refrigerator for 24 hours.
  4. Strain the mixture through cheesecloth until a clear, shiny liquid is achieved. Serve over ice in rocks glasses.
