Tools

Uses an open flameA step here involves a lit match or a torch near citrus oil or alcohol, both of which catch. Work away from anything that can burn, keep the bottle well back from the flame, never flame anything over a glass you are holding, and never add alcohol to something already alight. Expect a brief flare — that is the point of the technique — and give it room.

Method

  1. Pour the coffee liqueur into a heatproof glass and float the sambuca on it over the back of a bar spoon.
  2. Pour the Irish cream and the blue curaçao into two separate shot glasses and set them beside it.
  3. Light the sambuca and let it burn for a few seconds, then cover the glass to put it out and give it a moment to cool.
  4. Pour the two shots in and drink it while the colours are still moving. Never from a glass that is still lit, and never through a plastic straw — a bar that hands you one has not thought about what a flame does to plastic.
