Tools

Uses an open flameA step here involves a lit match or a torch near citrus oil or alcohol, both of which catch. Work away from anything that can burn, keep the bottle well back from the flame, never flame anything over a glass you are holding, and never add alcohol to something already alight. Expect a brief flare — that is the point of the technique — and give it room.

Method

  1. Shake the Campari and lemon juice with ice and strain into a chilled cocktail glass.
  2. Warm the brandy gently in a small pan set well away from anything that can catch.
  3. Ignite the warmed brandy and pour it into the glass in a steady stream, then let it burn out before drinking.
  4. To skip the flame entirely, shake the brandy cold with the rest instead — that version is the Edisonian.
