Preparations
Place 1 cup sugar and 1 cup water in a saucepan and bring it to boil, stirring to dissolve the sugar. Remove the pan from heat and let the syrup cool completely before using or storing.
Toast six cloves, a cinnamon stick, six allspice berries and ten peppercorns until fragrant. Off the heat add a quarter cup of demerara syrup and a splash of overproof rum, scrape in a split vanilla bean and drop the pod in too. Top up with the rest of the bottle, jar it, and leave it somewhere dark until it tastes right, shaking occasionally.
Method
- Coat the rim of a chilled cocktail glass with sugar.
- Shake the ingredients with ice until cold.
- Strain into the prepared glass.
