Pear Cordial

Method

Place 2 oz malic acid, 1.8 oz citric acid, 15 cups water, 9 ¼ cups superfine (caster sugar, and 3 lbs. Diced Passe Crassane pears in a large container and stir to combine. Chill in the refrigerator for 24 hours. Strain the cordial through cheesecloth, stir in 1 teaspoon vodka, and use immediately or store in the refrigerator.
