Oleo Salis

Method

Place the zest of 10 lemons and 10 oranges in a bowl, add ½ cup kosher salt, and wearing latex gloves, work the mixture with your hands for 2 minutes. Cover and let the mixture sit overnight. Stir in 2 oz Suntory Toki whiskey and strain the liquid into a mason jar, pressing down on the solids to extract as much as possible from them.
